Fibre is found in a combination of soluble and insoluble fibre, mainly in grains, seeds, nuts, vegetables, fruit and legumes. These ingredients were used in the recipes to increase the fibre content of the dishes and to help reach the ideal of ± 25 g fibre per day in the meal plan. Fibre in the diet prevents constipation and diseases of the colon, lowers the risk of colon cancer, increases “good” bacteria in the colon, assists in controlling blood sugar, cholesterol and triglycerides and hence lowers the risk of cardiovascular diseases.
